Beef Burritos


§         1 tbsp (15 mL) olive oil
§        
1 small onion, finely chopped
§         3 cloves garlic, finely chopped
§         1 tsp (5 mL) each ground cumin and paprika
§         ¼ tsp (1 mL) each of cayenne and cinnamon
§         1 lb (500 g) ground beef
§         2/3 cup (150 mL) tomato sauce
§         1 tsp (5 mL) salt
§         flour tortilla shells
§         shredded cheddar
§         sour cream and salsa to serve

 Preheat oven at 350˚F.

 Heat oil in a large skillet.  Add onions and garlic.  Cook a few minutes until tender.  Add spices and cook until fragrant, about 30 seconds.  Add beef and cook until it loses raw appearance.  Add tomato sauce.  Simmer 5 minutes.  Season to taste. 

 Fill the tortilla with several spoonfuls of meat mixture and roll tortilla.  Repeat.  Place tortillas side by side in an ovenproof dish and sprinkle with cheddar.  Heat in oven until cheese melts.

 Serve with sour cream and salsa.

 Option:  Add 1 can refried beans to meat mixture for beef and bean burritos.
