Please note: the conversion from Kilograms to pounds is : lb = Kg x 2.2 Kg=lb / 2.2
On the rail weight is the weight of the carcass before it is cut into steaks, roasts etc. The price you pay is based on this weight.
Off the rail weight is the weight of the meat you take home – after the carcass is cut, wrapped and frozen.
